Bottarga di Tonno - Grated Tuna Eggs - Fratelli Burgio - 50g

Grated bottarga di tonno, salted and dried tuna roe: scatter a little over pasta, risotto or seafood for a briny hit.

The roe is salted and naturally dried the old way until it turns dense and deeply savoury, then grated so it is ready to use. It comes from Fratelli Burgio, whose deli opened in Solarino in 1978 and now sits in the Ortigia market in Siracusa.

How to use it

• Our favourite: on pasta, with a thread of olive oil and a little of the cooking water.
• Over risotto or seafood.
