Pesto al Finocchietto Selvatico - Sicilian Wild Fennel Pesto - Fratelli Burgio

The Burgio brothers are a Sicilian family whose deli was born in 1978 in the countryside of Solarino and today sits inside the Ortigia market in Siracusa, where the stalls look out to the sea. They keep alive the flavours of the island, working the old way and without preservatives.

Product of Sicily. A wild fennel pesto, the herb that defines Sicilian pasta con le sarde, rounded out with almonds, sun dried tomatoes, capers and a little anchovy. Toss it through pasta with a splash of cooking water.

Ingredients: wild fennel (75%), extra virgin olive oil (11%), almonds (5%), sundried cherry tomatoes (5%), capers (2%), anchovies (2%).

Usage tip: warm it for 5 minutes in a pan with a little extra virgin olive oil, then add your pasta.
