I immediately purchased all the honey varieties carried by La Bottega as soon as I saw them. However, they were all crystalized and very hard. Finally this past month I devised a method of very slowly, gently warming them.
(Raw honey must never be heated above 40 degrees Centigrade because any higher temperature destroys the vitamins and other substances in the raw honey that makes it so life-giving and healthy.)
Now that they are all soft enough to easily spoon out they have become my absolute favorite honey varieties. The eucalyptus honey has been described by some of my honey-tasting friends as: buttery. But the others as well, the agrumi (hives set among the groves of citrus trees) and the sulla (nectar collected from the sweet vetch plants, the second most prevalent forage crop) you will not want to miss out on! All three of them are so special, each with it's own distinct, subtle flavor. For the honey connoisseurs among us these honeys are essential!
