Pesto di Pistacchio - Sicilian Pistachio Pesto - Fratelli Burgio

Sicilian pistachio pesto, close to 60% pistachio with only olive oil and salt: stir it into hot pasta with a splash of cooking water.

The Burgio family opened their deli in Solarino in 1978 and today sell from the Ortigia market in Siracusa. No palm oil, no preservatives. More than half the jar is pistachio, which is why it costs more than a supermarket spread and tastes of pistachio, not sugar.

How to use it

• On pasta, loosened with a little cooking water; with guanciale, sundried cherry tomatoes or marinated prawns.
• On toasted bread.
• Straight off the spoon.
