Estratto di Pomodoro “Strattu” - Tomato Extract - Fratelli Burgio - 90g

The Burgio brothers are a Sicilian family whose deli was born in 1978 in the countryside of Solarino and today sits inside the Ortigia market in Siracusa, where the stalls look out to the sea. They keep alive the flavours of the island, working the old way and without preservatives.

90g. Strattu is Sicily's sun dried tomato extract: tomato paste spread on wooden boards and dried under the summer sun until it turns dark, dense and intensely savoury. A small spoonful gives sauces, braises and seafood a deep tomato base. Use it sparingly, it is concentrated.
