Strattu, Sicily's sun-dried tomato extract: stir a small spoonful into sauces, braises or seafood for a deep tomato base.

Tomato paste is spread on wooden boards and dried under the summer sun until it turns dark, dense and intensely savoury. The Burgio family, whose deli started in 1978 in the countryside of Solarino and now sits in the Ortigia market in Siracusa, make it the old way, without preservatives.
