Sicilian Almond Cookies - 'Ricci di mandorla'

Ricci di mandorla, soft almond curls that are half almonds, to have with an espresso or a cup of tea.

Aruci calls them ricci, curls, after their shape. Peeled Sicilian almonds make up 50% of the dough, with brown sugar, egg white and lemon peel: soft inside, a festive sweet that works any time of day.
