Anchovy fillets in olive oil: melt them into a sauce, or lay them on buttered bread.

They sit at the heart of so much Sicilian cooking. The Burgio family opened their deli in Solarino in 1978 and today sell from the Ortigia market in Siracusa, still working the old way and without preservatives.
