The Burgio brothers are a Sicilian family whose deli was born in 1978 in the countryside of Solarino and today sits inside the Ortigia market in Siracusa, where the stalls look out to the sea. They keep alive the flavours of the island, working the old way and without preservatives.
Ricotta Salata is a pressed, salted whey cheese, firm and a little crumbly, nutty with a gentle salinity. It is made to be grated over tomato pasta, the classic being pasta alla Norma, and it is just as good shaved over salads or on a cheese board.
Usage: open the vacuum-sealed packaging at least 10 minutes before using. Take it out of the fridge an hour or two before serving so it comes back to room temperature, and pat it dry. Never freeze it.
Storage: once opened, do not keep it in the plastic it came in. Wrap it in food paper, which lets it breathe while protecting it from air, and replace the paper each time. Keep it away from unwashed vegetables.
