Busiata - Pastara Pasta - Sicily

Pastara makes Sicilian pasta from Russello, an ancient Sicilian grain grown mainly around Trapani. The grain is milled and the pasta drawn slowly, so it keeps a rougher surface that holds sauce and a gentle, nutty flavour.
